Recipe Time! Christmas Molasses Cookies with Tuna Chunks

We had a request for Christmas cookie recipes, and the Razor is happy to oblige! Here at Razor HQ, nothing says "Christmas" quite like Professor Osler's Molasses Cookies with Tuna. Here's the recipe:

Ingredients:

1 cup molasses
1/2 pound butter
2 teaspoons baking soda
1 cup sugar
1 can tuna
1/4 cup hot water
4 cups flour
2 teaspoon salt
1-1/2 teaspoon ginger
1/2 teaspoon ground cloves
1/2 teaspoon allspice
2 teaspoons cinnamon

Heat the molasses to a boil. Remove from heat and add butter, stirring until melted. Place the sugar in a deep bowl and add soda to the hot water; pour water into the molasses. Pour the molasses mixture into the bowl of sugar and thoroughly mix with the tuna. Add spices, flour and salt and mix with molasses and sugar. Pour into a loaf pan lined with parchment paper or waxed paper and refrigerate.

Preheat oven to 325. Cut dough as thin as possible and bake on a non-stick surface or a greased sheet for 15 minutes. Cool on a rack as soon as done. They will be great for the holidays, and we're betting they'll be a family favorite.

Peppermint Snowballs - courtesy of the Betty Crocker web site.

Makes 3 to 4 dozen depending on the size of the snowball!

325' oven; bake time 12 to 15 minutes or until set (but not brown) Adjust baking time for convection oven.

Dough:
1 cup butter (2 sticks), softened
1/3 cup powdered sugar
1/4 to 1/3 cup finely crushed or ground peppermint candies (12 candies or 3 regular sized candy canes)
1 t vanilla extract
2 1/4 cup all purpose flour
1/4 t salt

Rolling Mixture:
1/4 cup finely ground peppermint candy (see above)
1/4 cup powdered sugar

Mix: butter, 1/3 cup powdered sugar, crushed peppermint candies and vanilla in a medium bowl.
Stir in flour and Salt. Dough may be a little crumbly.

Shape dough into snowballs (about 1 tablespoon of dough)and place on an ungreased cookie sheet

Bake ~ see above (do not let them brown). Remove from oven and immediately roll in the sugar/candy mixture.

Let cool
Form snow fort!
 
Would that TUNA be packed in water or packed in oil?

Sounds delicious.

Should I serve them to my cats?
 
Mmmm... tuna and molasses... the two best tings in life, now in one convinient package! This will go great with my Christmas ham glazed with chocalate and caramel syrup...

This is PERFECT. Spencer actually went fishing yesterday with his preschool friends and they ACTUALLY EACH CAUGHT A FISH!!!! I was horrified when he presented it to me. I honestly screamed and refused to look at it.
It was kind of like when my siamese cats used to leave me headless mice outside my door in the morning.. "Uhmm. gee FOR ME???? REALLY????"


It never occurred to me I could use it in cookies. So Uhmmm Do you removed the head? or leave it on?

I just LOVE the great outdoors. NOT!!!!! I mean, I hate to be such a GIRL... but I just don't ever really ever ever need to know what my food looks like before it was uh my food. Seriously.
 
Was DONUT one of the fishermen? And if so, what strange mutant species of fish did he catch?
 
And that, my dear, is the beauty of canned tuna.
 
You know I refused to look at it to even be able to tell what kind if fish it was. Teacher James did not even know. Its kind of gray and about a foot long.

Yeah when I make these cookies I will definitely used the CANNED tuna. No fuss no muss....

Here is my recipe from the world famous INA GARTEN aka the Barefoot Contessa a show on the Food network.

It is the most fattening thing I have EVER seen anyone make on TV. EVER.

It has NINE sticks of butter.

No Match for fish cookies but....

INA GARTEN PECAN BARS
Ingredients
Crust:

* 1 1/4 pounds unsalted butter, room temperature
* 3/4 cup granulated sugar
* 3 extra-large eggs
* 3/4 teaspoon pure vanilla extract
* 4 1/2 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt

Topping:
nocoupons

* 1 pound unsalted butter
* 1 cup good honey
* 3 cups light brown sugar, packed
* 1 teaspoon grated lemon zest
* 1 teaspoon grated orange zest
* 1/4 cup heavy cream
* 2 pounds pecans, coarsely chopped

Directions

Preheat the oven to 350 degrees F.

For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.

For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.
 
Tyd - Reserve me a room in the cardiac ward now.

For some reason, I think this recipe would work just fine WITHOUT the canned tuna! In fact, I may give it a try tomorrow.
 
So gross huh?/ OK but wait
'Bill was telling me that his mom makes a great chocolate cake with sauerkraut in it HAHAH seriously!!! AND there is a spice cake you can make with tomato soup. so who knows.

I like tuna carrot cake the best. Topped with Pesto.

And to annonymous2...check out any vegetarianesque store (Whole Foods, Wheatsville Co-op here in Austin) Vegans need blackstrap molasses to keep them going...so, if you see a Prius with an Obama '08 sticker, follow it and ye shall find!

For the record, the Vegans disapprove of the Osler mola-tuna cookies. Fish is murder!

Vegans also drive Subarus to Whole Foods.
 
hmmm...my wife says I'll eat anything...I did believe her...I don't now...


p.s. tyd - any Ina Garten recipe = lots of butter...I wouldn't be surprised if she had a cocktail recipe calling for a stick of butter
