Recipe for Hoppin Gianni
Now if ya'll live in the south you are required to eat Greens and Black-eyed Peas for New Years.
Black Eyed peas are pretty bland so I thought I would doctor them up today with a little rice. Problem is, what looked like rice was orzo, so hence Hoppin Gianni.
Here's the recipe:
~ 1 small container fresh black eyed peas (boil in water for about 15 minutes and drain
~ 1 small package white rice (or orzo - cooked)
~ saute 5 minutes: 1 carrot (finely diced); 1 small onion (finaely diced); 1/2 red bell pepper (finely diced); 1 small jalapeno pepper (seeded & finely diced)
~ add a handful of crumbled bacon and the blackeyed peas to the vegetables, set heat to low and steam 5 to 10 minutes.
~ mix orzo and pea mixture
Happy New Year

It sounds really good, Christine!
I had a can of black-eyed peas out on the counter all day, but I was tired, didn't feel like cooking, and went and got Thai take-out instead.
My resolutions have tended to be more abstract in the last few years, usually just one or two guiding words, like:
1. Gratitude
2. Courage
3. Clarity (this year's)
I hope I can live up to them . . . and I hope everyone has had a good New Year's Eve and New Year's Day!

1) Stop being late to everything.
2) Stop making resolutions I can't keep. (See #1)
